Making great tzatziki is easier than you think, it’s much better than the store bought stuff, you get more of it and it doesn’t have all the yuck in it. Use fresh ingredients, good greek yogurt, fresh dill (not dried) and a fresh lemon if possible, although lemon juice will work in a pinch.
Tzatziki
1 cup Greek Yogurt (2%)
1 1/2 Tbsp Lemon juice or
zest & juice of 1/2 fresh lemon
2 Tbsp Fresh dill, chopped
1 small or 1/2 large clove of garlic, minced
1/2 English cucumber, washed, grated and squeezed
1/4 Tsp. Kosher Salt
Pepper to taste
Prepare the lemon zest and the cucumber first to have them ready, use a rasp or the fine side of a box grater to zest the lemon. Grate the cucumber on the fine side of the box grater and place the shreds into a clean kitchen towel, gather up the sides and squeeze out all the water.
Add all ingredients into a bowl and mix to combine. Keep covered in the fridge until ready to use or up to three days. Try with fresh Pita and Souvlaki
