This is an awesome sauce, it has incredible balance between salty, briny creamy and bright, it goes perfectly on fish for fish tacos or my breaded cod fillets. It would be a perfect topping on a po’ boy sandwich or a lobster roll. This is even a great base for a tuna sandwich; basically anywhere you would use tartar sauce, substitute this one.
I like this sauce to be pretty chunky so chop the ingredients rather than blending them in a bullet blender.
25g Green onion, chopped fine
25g Fresh lemon juice (bottled will work too)
1 Tsp Lemon Zest (omit if not using fresh)
15g Capers, chopped
8g Fresh Cilantro, chopped fine
2g Kosher salt
1/2 Tsp Black Pepper, freshly ground
250g Mayonaise, good quality
Chop all ingredients as indicated, place everything in a bowl and stir to combine. Done!
This sauce will keep in the fridge for at least a week.
