There are some foods that I make just to have a good excuse to dip them in a sauce that I love… my Thai Salad Rolls are one of these foods and I make them just so I can use them as a vehicle to carry this delicious sauce to my mouth.
The sauce is so simple to make and keeps for a long time. The trick is to use authentic ingredients and unsweetened, natural peanut butter. This dish may involve going into that scary “international” aisle of the grocery store but don’t worry, I’m here for you. For those of you in Canada, all ingredients can be found at Superstore/Loblaw’s.
Thai Peanut Satay Sauce
1 Can (400ml) Coconut Milk, full fat
210g Natural Unsweetened Peanut Butter
55g Red Curry Paste
140g Palm Sugar
25g Soy Sauce (use gluten free if desired)
25g Lime Juice, bottled or fresh
6g Fresh Garlic
Chop or grate the palm sugar if you have a blender that won’t break it up easily. Add all ingredients to a blender and blend until smooth. Done! Keep in the fridge for up to a week. Enjoy!
